Sorrel is a leafy green vegetable that is easy to grow. Choose a location with well-drained soil that receives full sun to partial shade. Sow sorrel seeds in early spring or late summer, 1cm (½”) deep, and 10-15cm (4-6”) apart. Keep the soil moist to promote germination, which usually takes 7-14 days. Thin the seedlings to 30cm (12”) apart when they are about 5cm (2”) tall. Sorrel prefers soil that is slightly acidic with a pH between 6.0 and 6.5. Fertilize the soil with organic matter before planting and add a balanced fertilizer every 4-6 weeks during the growing season.


Sorrel is a fast-growing crop that can be harvested as soon as the leaves are large enough to use, usually within 6-8 weeks of planting. Harvest sorrel by cutting the outer leaves from the plant, leaving the inner leaves to continue growing. Sorrel leaves can be used fresh in salads or cooked in soups, stews, or sauces.
