Savory is an aromatic herb that is easy to grow and requires little maintenance. Choose a location with well-drained soil that receives full sun to partial shade. Sow savory seeds in early spring or late summer, 1cm (½”) deep, and 15-20cm (6-8”) apart. Keep the soil moist to promote germination, which usually takes 7-14 days. Thin the seedlings to 30-45cm (12-18”) apart when they are about 10cm (4”) tall. Savory prefers soil that is slightly alkaline with a pH between 6.5 and 7.5. Fertilize the soil with organic matter before planting and add a balanced fertilizer every 4-6 weeks during the growing season. Savory is a fast-growing crop that can be harvested as soon as the leaves are large enough to use, usually within 6-8 weeks of planting. Harvest savory by cutting the stems just above the ground, leaving some leaves on the plant to regrow.
